  • 1/2 tsp vanilla extract
  • 1/2 cup heavy whipping cream, room temperature
  • 1 cup heavy whipping cream
  • 1 cup unsweetened almond milk
  • 1/2 cup powdered Swerve Sweetener
  • 4 large egg yolks
  • 1/2 tsp xanthan gum
  • 1/3 cup cocoa powder
  • 3 tbsp butter, cut into 3 pieces
  • 1 cup heavy whipping cream, chilled
  • 3 tbsp powdered Swerve Sweetener
  • 1/2 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 1/2 ounce sugar free dark chocolate

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine almond flour, cocoa powder, powdered Swerve Sweetener, and salt. Mix in melted butter and water. Press into a greased 9×13 inch baking dish and bake for 10 minutes; let cool.
  2. Beat softened cream cheese with powdered Swerve Sweetener and vanilla until smooth. Whip heavy cream separately until stiff peaks form. Fold whipped cream into cream cheese mixture and spread over cooled crust.
  3. In a saucepan, whisk almond milk, egg yolks, powdered Swerve Sweetener, xanthan gum, cocoa powder, and butter over medium heat until thickened (5-7 minutes). Allow to cool slightly before pouring over the cheesecake layer.
  4. Whip chilled heavy cream with powdered Swerve Sweetener and vanilla until stiff peaks form. Spread over the chocolate pudding layer and dust with cocoa powder. Chill for at least two hours before serving.
