  • 2 medium butternut squash
  • 2 cups cooked chicken, shredded
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp ground cinnamon
  • Salt and black pepper, to taste
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/4 cup chicken broth or stock
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup dried cranberries or raisins (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • Fresh parsley, chopped
  • Drizzle of honey

Instructions

  1. Preheat the oven to 400°F (200°C). Halve the butternut squash and remove seeds. Brush cut sides with olive oil, drizzle with honey, and season with cinnamon, salt, and pepper.
  2. Place squash cut side down on a baking sheet and roast for 30–40 minutes until tender.
  3. In a skillet over medium heat, sauté diced onion and garlic in olive oil until translucent. Add shredded chicken and chicken broth; cook until heated through.
  4. Stir in Parmesan cheese and optional ingredients (cranberries, nuts). Mix well.
  5. Scoop some flesh from roasted squash into the filling mixture for added flavor.
  6. Stuff each squash half evenly with the chicken filling.
  7. Return to the oven and bake for an additional 15 minutes until golden brown.
