  • 1/2 teaspoon ground cumin

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 2 ripe avocados
  • 1 lime, juiced
  • 2 tablespoons chopped fresh cilantro
  • 1 cup diced tomato
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with olive oil, paprika, cumin, salt, and pepper; spread on a baking sheet and roast for 25-30 minutes.
  3. While sweet potatoes roast, brown the ground beef in a skillet over medium heat; drain excess fat and stir in taco seasoning.
  4. For guacamole, mash avocados with lime juice and cilantro until creamy but slightly chunky.
  5. Combine diced tomatoes, red onion, and cilantro in a bowl for pico de gallo.
