  • 14 oz firm tofu
  • 2 tablespoons soy sauce
  • 1/2 tablespoon maple syrup
  • 1/4 cup coconut milk
  • 1/2 tablespoon sriracha
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1/3 cup peanut butter
  • 1 teaspoon brown sugar
  • 2 teaspoons lime juice
  • 1/2 tablespoon rice vinegar
  • 1/2 teaspoon ginger powder
  • 1/3 cup warm water

Instructions

  1. Drain tofu for at least 20 minutes to remove excess moisture.
  2. Mix soy sauce, maple syrup, coconut milk, sriracha, garlic powder, and ginger powder in a bowl to create the marinade.
  3. Preheat oven to 200ºC (400ºF).
  4. Cut drained tofu into strips and marinate for at least 20 minutes.
  5. Bake marinated tofu for 10-12 minutes on each side until golden.
  6. Skewer baked tofu and prepare the peanut sauce by mixing peanut butter, brown sugar, soy sauce, lime juice, rice vinegar, ginger powder, and warm water together until smooth.
  7. Serve skewers with the peanut sauce and garnish as desired.
