  • 2 medium zucchinis, sliced
  • 1 1/2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese (plus extra for serving)
  • 1/4 cup fresh basil, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 tsp Italian seasoning

Instructions

  1. Cook the pasta in salted boiling water until al dente; reserve ½ cup of pasta water before draining.
  2. In a large skillet over medium heat, sauté zucchini in olive oil for 3–4 minutes until soft. Add garlic and cook for another minute.
  3. Stir in cherry tomatoes, salt, pepper, red pepper flakes (if using), and Italian seasoning; cook for 5–7 minutes until softened.
  4. Combine the cooked pasta with the sautéed vegetables; add reserved pasta water as needed for consistency.
  5. Remove from heat and mix in grated Parmesan and chopped basil before serving warm.
