  • 3 cups + 1 heaping tablespoon gluten-free baking flour blend with binder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup cold butter or vegan butter, cubed
  • 1 large egg
  • 1 pint blueberries
  • 6 oz raspberries
  • 6 oz blackberries

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a 9×13” baking pan with nonstick spray.
  2. In a medium bowl, mix berries with 1/2 cup granulated sugar and a heaping tablespoon of flour; set aside.
  3. In a large bowl, whisk together remaining flour, sugars, baking powder, cinnamon, and salt. In another bowl, whisk egg and vanilla; pour over dry ingredients. Add cubed butter and mix until crumbly.
  4. Press slightly more than half of the crumb mixture into the prepared pan. Spread the berry mixture evenly over this layer and top with the remaining crumbs.
  5. Bake for 38-40 minutes until golden brown. Cool completely before cutting into squares.
