Instructions
Prepare all ingredients by chopping vegetables and grating the carrot.
In a large pot, heat oil over medium heat. Sauté onion and green pepper for about 5 minutes until softened; then add garlic and sauté for another 1–2 minutes.
Stir in diced tomatoes and tomato paste; cook for an additional 3–5 minutes.
Add the remaining ingredients and bring to a simmer. Cook for about 30 minutes, stirring occasionally.
For a creamier texture, blend part of the chili with an immersion blender and return to the pot.
