  • 1/2 tbsp oil
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 1 small can mushrooms (sliced)
  • 1/2 tbsp soy sauce
  • 3.5 oz fresh spinach
  • 1 1/2 cups marinara sauce
  • 68 lasagna noodles
  • 1 2/3 cups hummus
  • 7 oz vegan cheese

Instructions

  1. Cook the lasagna noodles in boiling salted water until al dente; drain and set aside.
  2. In a skillet, heat oil over medium heat and sauté onion, garlic, and mushrooms for about 4 minutes. Add soy sauce and spinach; cook briefly until wilted.
  3. Stir hummus into the vegetable mixture and adjust seasoning as desired.
  4. Preheat your oven to 360°F (180°C) and spread marinara sauce in a baking dish.
  5. Spread the hummus filling on each noodle, roll them up tightly, and place seam-side down in the dish.
  6. Top with remaining marinara sauce and sprinkle with vegan cheese.
  7. Bake for 20-25 minutes until heated through.
