  • 23 large burrito sized tortillas (whole wheat or gluten free if desired)
  • 2 very ripe avocados
  • 1/2 cup precooked black beans (rinsed)
  • 1/4 cup corn
  • 2 tablespoons diced red onion
  • Juice of 1/2 lime
  • 1 garlic clove (minced)
  • 1 teaspoon cumin
  • 1/8 teaspoon crushed red pepper
  • Handful chopped cilantro
  • Sea salt and cracked pepper to taste
  • Olive oil

Instructions

  1. In a mixing bowl, mash ripe avocados with a fork. Mix in minced garlic, lime juice, sea salt, cracked pepper, and crushed red pepper until well combined.
  2. Fold in chopped cilantro, rinsed black beans, corn, and diced red onion gently until evenly mixed.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Place half of the avocado mixture on one half of each tortilla and fold them over.
  5. Cook folded quesadillas in the skillet for about 3-4 minutes on each side until golden brown.
  6. Remove from skillet and cut into wedges. Serve immediately with salsa or guacamole.
