  • 2 cups chopped rotisserie chicken
  • 2 tbsp olive oil
  • 2 apples (peeled and chopped)
  • 1 white onion (diced)
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 cans cannellini beans (drained)
  • 2 cups shredded Mexican blend cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped apples and onion; cook until softened (6-8 minutes). Stir in chili powder and cumin.
  2. Reduce heat to medium-low, melt butter in the same pot. Whisk in flour for about 60 seconds.
  3. Gradually add chicken broth and whisk until smooth. Stir in half & half and simmer until thickened (3–5 minutes).
  4. Mix in the cooked chicken, drained beans, and reserved apple/onion mixture until combined.
  5. Adjust thickness with additional broth if necessary, then stir in shredded cheese until melted.
