  • 35 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 68 whole pepperoncini peppers
  • 1 tbsp dried chives
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp salt
  • 1 tsp black pepper
  • 12 tbsp pepperoncini pepper juice (from the jar)
  • 4 tbsp ghee

Instructions

  1. Pat the chuck roast dry and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat; sear the roast until browned on all sides.
  3. Deglaze the skillet with beef broth to capture all flavors.
  4. Place the roast in a slow cooker, pour the deglazed broth over it, and add seasonings and pepperoncini.
  5. Cook on low for 8–10 hours or high for 5–6 hours until fork-tender.
