  • 3 zucchinis, sliced
  • 2 cups breadcrumbs (gluten-free if needed)
  • 3/4 cup cashews
  • 1 cup almond milk
  • 28 oz jar tomato sauce
  • 5 oz vegan mozzarella shreds
  • 2 Tbsp Italian herbs

Instructions

  1. Preheat the oven to 410°F. Prepare an 8×11 inch casserole dish.
  2. Lay zucchini slices on paper towels, sprinkle with salt, cover with more towels, and let rest for 30 minutes.
  3. Blend cashews and almond milk until smooth; set aside.
  4. Heat olive oil in a pan and fry zucchini slices dipped in cashew mixture and breadcrumbs until golden brown.
  5. In the casserole dish, layer tomato sauce, fried zucchini, vegan cheese, and repeat until all ingredients are used.
  6. Bake for 20 minutes until golden brown on top.
